Veggie Laksa

So, because of THIS (<--- stupid thing I wish I'd never heard about), I've been trying to go more vegan -- making the effort to cut out dairy and eggs except for every once in a while as an added indulgence. Of course, this means I have to search for recipes that are non-vomitous AND non-dairy/non-meat/non-egg.

I found this:
Veggie Laksa
salad & noodles-5

"Laksa" is a yummy coconut milk based noodle soup that is a fusion of Malay/Chinese elements, most often found in Malaysia and Singapore. You can make it with any thickness of rice noodles, I'm using regular width but I'm sure vermicelli is yummy, and probably extra wide too. I'm definitely NOT going to make my own curry paste -- so I'll invest in a ready-made Laksa or Thai curry paste; check your local grocer. For your two cups of mixed chopped vegetables, I suggest (and so does the author of this recipe) red pepper, carrot, and zucchini julienned ... or cut into baton-like strips. Recipe serves three.

I think Laksa Soup has the potential to become a much loved weekly menu item.

Ingredients:

3/4lb [350g] rice noodles
2oz [60g] Laksa paste or other Thai curry paste
1 Lg can [1 1/2 cups] coconut cream
2 cups mixed chopped vegetables (see note above)
Handful of fresh basil leaves

What to do with your ingredients:

Place noodles in a heatproof bowl and cover with boiling water. Allow to stand for 1 minute then massage to loosen into individual strands. Drain.

Meanwhile heat 2 tablespoons of peanut or other vegetable oil in a large saucepan over high heat. Add curry paste and stir fry for 30 seconds. Quickly add coconut cream and 2 cups boiling water. Bring to the boil and add vegetables. Simmer for 2 minutes or until vegetables are cooked to your liking.

To serve, divide noodles between 3 bowls. Pour over soup and vegetables and top with basil leaves.

Hey ... Eat!

We eat out often. A lot more than we should but with only two people in the house, it's so darn easy.

Unfortunately, most places have limited options for a vegetarian and those options sometimes aren't too healthy. I try to make good decisions wherever we go (although occasionally the fries are calling too loudly) but even if I try to make a healthy choice, the choice isn't always there. I wish all fast food restaurants would start carrying healthy salads and start encouraging people to make lifestyle changes because there are times when you're on the go and you need food fast. But it shouldn't have to be shit. Wendy's has done a great job trying to make the combo meal healthier. You'll see from the list below that I do end up getting bean burritos, which aren't super fantastic -- but beans do have protein! I actually think the worst part of a burrito is the tortilla, which is why I love Taco Time's veggie burrito; they use whole wheat.

Anyway, we gotta keep trying! Fight the bulge!

For your enjoyment, a list of the items I order when we patronize fast food joints:
  • In-N-Out: grilled cheese ... and fries

  • Wendy's: berry almond salad (new item!) and baked potato

  • Subway: veggie footlong on wheat with avocado

Friday Dinner

Today is Thursday, which means tomorrow is Friday. (Forgive me for sounding like Rebecca Black just then.) Friday is the day that I weigh in, which means I go hungry all.day.long. Then, post weigh-in, I eat my apple with crunchy peanut butter and drink thirty-two ounces of water in one fell swoop. So basically, Fridays suck balls. But Friday night is when I make dinner. I start planning the meal on Monday and have practiced cooking it in my mind to perfection by the time I buy the groceries after I leave work on Friday. I started doing this a few months ago in an effort to cook more and reward myself for a week of healthy eating. I also read "My Life in France" and it inspired me to be brave and realize that my food doesn't have to be perfect and that every dish won't be a winner or to everyone's liking -- including mine.

This week I'm making Scallops with Basil Cream Sauce and Pasta.
I've been dreaming all week, nay, obsessing, about this lovely.
I can't wait to spin my fork around and dive in.

Here's how you make it ...

1] a tablespoon of garlic -- fresh if you're super cook, already minced and from the jar if you're me
2] 1/2 cup of white wine -- I'm using the leftover moscato
3] a chunk of butter -- like maybe 3 or 6 tablespoons 
4] combine these over medium-high until the wine cooks down and gets a bit thick
5] add scallops and cook for just 2 to 3 minutes per side, depending on how big your scallops are
6] remove pretty scallops
7] add 2 cups of heavy cream -- yum -- and simmer vigorously until nice and saucy
8] once sufficiently thick and creamy, add pasta and basil

Oh yeah, did I not tell you? You need to be cooking your pasta (I'm using linguine) while you're making the sauce.

9] add the scallops back in at the last minute because you don't want them to become overdone

Tra la la. Enjoy.

Here are some suggestions to pump up the recipe if you so wish it:
  • add some sauteed veg like spinach or peppers
  • sprinkle with red pepper flakes a la Giada
  • red onion would be delightful (if you like that sort of thing)
  • any fresh herb in addition to or in place of basil
  • eat with crusty bread
  • slice in some fresh tomato
  • swap out scallops for shrimp or crab
Remember, Julia Child advises us to never apologize for our cooking, so be fearless.

The Perfect Food

Sandwiches, obviously.
The last bite of a well made sandwich is just as delicious as the first.
The little bits that fall out are the perfect ending and leave you dreaming about the next time.
Because you have to eat it with your hands, your focus is entirely on the sandwich.
Your hands are full. Your belly is full.
Delish.

I have a few staples that I love.
  • tomato with mayo and lots of salt and pepper
  • crunchy peanut butter and honey
  • grilled cheese with swiss
  • cucumber with cream cheese
  • fried egg -- yolk still soft so it spills out when you bite in
But today I found some nummy yummy new sammies to add to my mix.

Do Over

Time to start again.
Time to restate goals.
Time to kick my own ass.

My ten year high school reunion is coming up at the end of June. I had set goals at the beginning of the year, but I've been being lazy and negligent, full of excuses:
  • I'm too sore to go to the gym
  • I should just hurry and eat the rest of this so it doesn't go to waste
  • I'm going to eat perfect tomorrow
  • Okay, that was the last cheat day
  • I'm too tired to go to the gym
  • It's a special occasion
  • I haven't eaten all day
  • There's nothing else to eat
  • I'm on vacation
  • It's snowing
Stupid girl. Now I really have to dig in. I have to go "biggest loser" and apply myself fully to exercising and eating right. I can do it. I know that I can. For years I keep saying, this is the year. Well, god damnit. This IS the fucking year. I'm tired of just looking passable, I want to look fantastic. Soon, my face will start to look old and my chubbiness will start to sag. Best to get a hot bod to detract from my aging face.

If anyone else wants to join in my pain, feel free. You'll hate your life for a while, but I'm hoping the pay off is worth it in the end. And when I say "end" I mean the rest of my life.

Fuck the FDA

With the recent recall of Similac baby formula, I started to wonder, where the fuck is the protection for the consumer? You may not know this, but the FDA has no legal power to force a company to issue a recall. The great idea is that all-wonderful capitalism will force a company to do a recall because if it harms the customer, it harms profits, and so a recall would be beneficial for both parties -- therefore, no power to the FDA. I see several things wrong with this. Since when has the corporate entity been invested in the best interests of the consumer? Case in point, McDonald’s. I know they may claim that they only provide food that is popular with the public. I call bullshit. How is upping the portion size popular? No one likes to be fat -- and it sure is hard to fight the fat when you’ve got skinny models eating huge hamburgers like it’s an everyday occurrence. How is using sub-par quality food the desire of the eater? It’s not. The company doesn’t seem to take into account the fact that eating more, eating more often, and eating high fat protein with carbohydrates, effects the health of the general populace.

Now, I will take a moment to say that as consumers we have to be smarter, we have to fight that urge (that all of us get at some time) to eat shit like chicken nuggets made from chicken goo and French fries that are only 80% potato and hamburgers that are supplemented with ammonia soaked tendons to fight rampant e-coli. We’re part of the problem too because we are, after all, the ones who keep buying it. But a family of four with two working parents doesn’t have time to worry about where the food is coming from or what its potential added ingredients are. They’re too worried about paying the bills and getting food on the table. Period. Worrying about the actions of a major food corporation is a luxury. Take me for example: I’m a DINK (double income, no kids) household. We both have our undergrads and are preparing for graduate school. I take ballet lessons, at the price of $380 a quarter, for fucks sake. I have all the time in the world to ponder the state of the FDA and the world in general. But I guarantee you if I worked 50 hours a week at two different jobs and we had two little kids to feed, I would be picking up a bag of burgers for dinner on Monday, and maybe $5 pizza on Friday. Why? Because it’s quick and dirty. And that’s all I have time for.

Why doesn’t the company say to themselves, gross -- I would never want to eat that, or have my kids eat that so the consumer wouldn’t want it (even though we apparently will eat anything for a cheap buck). But no. There’s some strange disconnect that goes on in the corporate brain that only has one focus: profits. If it’s cheaper to make chicken nuggets from processed bits of chicken livers, feet, tendons, and whatnot, full steam ahead. I hate these companies. I hate how they've taken something as simple as eating and turned into a numbers game. If revenue is to increase, and you expect that increase to be larger than population growth, that means you’ve got to have every individual eating more. How do you do that? Supersize and $1 menus and 2-for Tuesdays -- which gives us all more food than we need and yet still with a genetic imperative to eat, EAT, EAT! I find myself thinking about ‘The Jungle’; that great work of Sinclair’s that was so fierce it changed an industry and I wonder how did that happen? Why can’t it happen again? Where is our momentum as the repressed class? Make no mistake: we are the repressed class. The tippy top, the upper 9% of the income bracket, they hold all the cards, and we just while away our time in Middle Earth. The CEOs and shareholders of these corporations have lost touch, or perhaps they just don’t care; either way … something needs to change.

Our life expectancy for the current generation of children is less than mine. Aren’t we supposed to be living longer and longer? Not dying young of diabetes complications.
How do beetles get into baby formula exactly?
Why has dinner at the table died a slow and painful death?
Since when did cheap hamburger become a diet staple, and a baked potato suddenly became too damn difficult?

The FDA has several internal problems as well. It’s been essentially cut off at the knees by lobbyists and prior CEOs appointed to key positions within the organization. How can someone have the consumers interests at heart when their house, lifestyle, yacht, maid, prostitutes, are paid for by the very companies they are meant to oversee? It’s impossible. I don’t think these people are necessarily lacking in moral character. That much money blinds you. And they’ve been rewarded by the company for years, they feel loyal to them. That loyalty may be displaced but it’s hard to deny the hand that feeds you.

To those people out there who call for smaller government -- I say piss off. There is no organization with the power to infiltrate and enforce policies within these huge corporations except for the weight of an elected government. And I want safe food. Of course, I have no answers. I just can’t think of a better way to get better food into the mouths of all Americans, rich and poor alike, because I know we’re part of the problem; we’re the feeding end of a hungry hippo that can’t seem to stop opening its collective mouth, even if it’s for complete shite. But even still, knowing all that I know, my humble cry is: Government! Regulate!

Super Sucky

Diets suck.
I am hungry and would really enjoy a HUGE cinnamon roll.

tubby belly and

cellulite bottom and
fatty back.

2:30 pm: Strawberry and Banana Crisps
5:00 pm: Veggie Sushi Roll
And I have ballet tonight and a weigh-in Friday morning so no more eating after that.
This sucks; I'm already hungry.
It's worth it, though, right?

The Twenty Seventh

Today is my dad's 59th birthday.
To celebrate, we're going to their house for cake, ice cream, and dinner.
Not in that order.

For dinner I'm making cheesy spinach enchiladas and yummy cowboy caviar.
Mom is making the cake.
I bought a pint of personal mint chip ice cream for my dad.
Everyone else gets heavenly hash.

Happy birthday, Dad.

Making This

I'm going to make this lovely:

Mexican Souffle
6 large eggs
8 0z. sour cream
1 cup salsa
1 cup cheese (your preference)

Preheat oven to 375
Take out your 9-inch dish -- like a pie plate
Cover the bottom with salsa
Sprinkle cheese on salsa -- like a lot
In a separate bowl, beat the eggs ferociously with the sour cream
Pour the egg/sour cream goo over the top
Bake for 45-50 minutes until yummy (or middle is firm)

Supposedly this is delicioso. I will have to try it out and and see. I like all the ingredients: eggs, salsa, cheese, sour cream; so I should like the finished product. Of course, I should be making it this Sunday, but we're going out to brunch with my best friend from work, Jen. @ Mimi's. Our favorite. So perhaps next Sunday. I'll be sure to let you know how it goes.

The laundry is complete and put away.

Out and About

Lots of goings on at our house today:
  • Lunch with college roommate
  • Niece's birthday get-together
  • Dinner with out-of-town childhood friend
  • Late-night flick with work buddies

Hopefully I will have time for a quick cat nap...Tom asked me why I booked so much stuff on one day -- but honestly, everything just sort of fell into place this way. It will be a day of catching up with loved ones, gossip, reminiscing, and fun. What better way to spend the day?

Attack of the Christmas Treats

Why is it that even when everyone is busy shopping and wrapping and, in general, running around like mad people, they still find time to buy or bake delicious goodies and throw them in front of innocent passers-by?

Please stop. My willpower is only so strong and I cannot, day after day, continue to ignore yummy food everywhere I go. Where does this tradition come from? Is it because this is the time of year of excess? The time when we all celebrate our good fortune for the past year and indulge in treats and presents and give gifts and spend lots of money? And what better way to show our collective success than to gain weight? It's like in 'Fiddler on the Roof' when Topal wants a wife with 3 double chins to show how rich he is. We are all working towards our figurative (or actual) double chin during the holidays. Look at us - we can eat whatever we want! We're so prosperous! Look at all the excess!

I say: stop all the waste, stop all the unhealthy trains of treats upon treats. Instead, let's feed the hungry and not feed ourselves. We've eaten enough. Instead of sharing our good fortune with others of good fortune, let's bake goodies and buy presents for those less fortunate than ourselves. Plus, this way we can share in the holiday joy of weight loss rather than the hated holiday weight gain.

Shopping List

I'm a weird procrastinator. I will wait until the specified time I've designated in my own mind and then at that point, everything must be done. Of course, the designated point is generally the day/hour/minute before absolute breakdown. For example: shopping for Thanksgiving. I'm making all the side dishes and my mom is making the turkey, stuffing, and mashed potatoes. So, I have a lot of cooking to do and that means I have a lot of shopping to do because Tom and I don't have random Thanksgivingy foods lying about. I don't like to go this close to "the day" because it is usually a mad house with lots of women out for blood for the last cube of butter and then it's a race to a long line at the checkout stand but my procrastination told me to go today...and I have no say in the matter. To my joy - my local grocer had each and every checkout line open! Yay! Go team!

I love it when things work out in my favor.

Needless Turkey Murder Day

I love Thanksgiving - but as a vegetarian - I must make a point of reminding everyone that millions of turkeys (and other poultry and livestock) are murdered for the consumption of human beings every year. Don't hate me; I, like many people, enjoy seeing the beautifully roasted turkey pulled out of the oven and lovingly coated with gravy to be devoured because it's tradition. But the cost is not worth it. I don't want to talk about it for too long because it upsets me and I don't want to ruin my own festive season, so may I simply (and un-soapboxily) suggest reading some literature?
The majority of people have turned down a vegetarian lifestyle on the basis that "everyone eats meat." We all grow up eating meat, hearing that it's part of a "well balanced diet" and hearing about how healthy it is for us. But the norm isn't always the best for us. Used to be that "everyone smoked" or "everyone had unprotected sex."

I say: educate yourself and then you can make an informed decision. And if you don't switch to vegetarianism after your education, you can at least feel guilty while you eat murdered animals. :D I mean, I feel guilty that I'm not yet a vegan...

Something Blue

My Tom loves to eat macaroni and cheese of the blue box variety. It is one of his usual after work meals that I usually prepare for him. However, on Saturday nights after having not eaten all bloody day, I am in no mood to cook up delicious cheesy pasta for anyone - regardless of how much I love them (yes, I will be a very mean mother). But tonight is Sunday and I have a satisfied belly so am in a much more amiable mood.

I always take out the pot and start the water boiling. I salt the water generously and put the burner on high. Once the water is at a hearty bubble, I throw in the noodles (only spiral or character shaped - NO elbows for us) and turn down the heat. After soft to the bite, the water gets drained and in go milk (an extra splash for good measure), faux margarine (the extra healthy, no trans-fat, no hydrogenated, plus omega 3s, plus flax seed crap), and cheese packet. Mix it up and then comes the best part: my test bite. Every time I make Tom's m and c I get one spoonful of cheesy, milky, piping hot noodles. You know, to make sure I made it right.

I gave up eating macaroni and cheese pretty much at birth. An adolescence of dance equals an adolescence of weight worries - so I always abstained from those "fattening" dishes - like macaroni and cheese. Plus, as a kid we never really had box mac and cheese at the house. When Tom and I were in high school and a mutual friend of ours invited us rappelling, Tom told me he would bring lunch for us. We had spent many late night conversations discussing all of the things we liked and disliked - and of course, this dish came up - especially because it was (and still is) one of the only things he could cook. He told me that he makes the BEST macaroni and cheese because he always pushes the noodles into the water with the bottom of the box, and he always adds a little extra milk. Once we were at the cliff, I was too scared to go down the mountain (big surprise) and so we sat in the car at the bottom of the rock face and ate his delicious macaroni and cheese cold.

We always have our pantry stocked with blue boxes - ready for making and remembering all the little reasons we fell in love.

I Heart Hearts

Artichoke hearts, my love - to you I say: yum.
You are very delicious and nutritious and high in fiber.
I buy you in bulk at Costco.
I bring you home and ask Tom to open your jar.
He complains because the marinade gets on his hands.
I pour all the marinade down the drain.
I refrigerate you and enjoy at my leisure.

Again, yum.

Scrambled Eggs

Tom loves to have eggs and bacon for breakfast. I like to make it because it is quick and easy. Eggs are a great way to get some low calorie protein and they are incredibly versatile.
  • Over easy with toast
  • Poached
  • Over medium
  • Fried egg sandwiches
  • Egg salad
  • Boiled
  • Deviled eggs
  • Scrambled
Scrambled are the best because they are the easiest not to screw up. If you're a beginner, start with scrambled. Plus, making scrambled eggs is a beautiful, relaxing way to start the day. Here's how to make the most delicious eggs you will ever eat:
  • Start your pan on med/low heat
  • Add a tab of butter or margarine
  • Crack your eggs into a cup
  • Break the yolks with a fork
  • Whip the eggs until there is no distinction between yolk and white
  • Add a little milk
  • Dump into the pan
  • Add salt and pepper
  • Leave the eggs alone until the edges firm up
  • Using your spatula/wooden spoon pull the firm edges into the center, allowing the liquidy parts to seep out to the edge of the pan
  • Repeat until the eggs are firm but still shiny

Yum.
